How do you direct a documents path in Windows Server 2003?

I have successfully set up the my documents account on users on the domain... (\\posserver\docs\USERNAME HERE).' What I want to do is prevent users from accessing the directory above that (\\posserver\docs). Is there a way to share the folder with a variable or some other solution with the permissions??? I need nerds!!! lol
